- 2 cups graham cracker crumbs
- 1/2 cup melted unsalted butter
- 2 tablespoons granulated sugar
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup whipped topping (like Cool Whip)
- 1 package (3 oz) strawberry gelatin (Jell-O)
- 1 cup boiling water
- 1/2 cup cold water
- 1 cup sliced fresh strawberries
- 1 cup whipped topping (to mix into the gelatin)
- 1–2 cups whipped topping (for topping)
- Extra sliced strawberries for garnish
Instructions
- In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar. Press the mixture firmly into the bottom of a 9×13-inch dish. Refrigerate for at least 15 minutes to set.
- Beat softened cream cheese until smooth. Add powdered sugar and vanilla extract, and beat until fluffy. Gently fold in 1 cup of whipped topping. Spread over the chilled crust.
- Dissolve strawberry gelatin in 1 cup boiling water, stir until dissolved. Add 1/2 cup cold water and let cool slightly. Fold in 1 cup whipped topping and sliced strawberries. Spread this mixture over the cream cheese layer.
- Spread the remaining whipped topping over the strawberry layer. Garnish with extra sliced strawberries.
- Cover and refrigerate for at least 4 hours or overnight before serving.
Notes
Chill each layer before adding the next for clean, defined layers. You can swap the crust with crushed Oreos, mix berries, or even lighten it up with sugar-free gelatin and light cream cheese!
