Ingredients

  • 2 cups frozen or fresh corn kernels (thawed if frozen)
  • 1 cup shredded cheddar cheese
  • ½ cup cream cheese, softened
  • ¼ cup mayonnaise
  • 2 tablespoons chopped jalapeños (adjust to taste)
  • 2 green onions, finely chopped
  • 1 teaspoon chili powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • Salt and pepper to taste
  • ½ cup all-purpose flour
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • Cooking spray or a little oil for baking
  • Optional: Fresh cilantro, chopped
  • Optional: Lime wedges

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly spray with cooking spray.
  2. In a large bowl, mix corn, cheddar cheese, cream cheese, mayonnaise, jalapeños, green onions, chili powder, smoked paprika, garlic powder, salt, and pepper until well combined.
  3. Scoop about 1 tablespoon of mixture and roll into small balls. Chill for 15–20 minutes if too soft.
  4. Set up three bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs.
  5. Roll each ball in flour, dip into egg, and coat with panko breadcrumbs. Place on the prepared baking sheet.
  6. Lightly spray tops with cooking spray. Bake for 15–18 minutes until golden and crispy.
  7. Garnish with fresh cilantro and a squeeze of lime juice if desired. Serve warm and enjoy!

Notes

Adjust spice level with more jalapeños or cayenne. Try different cheeses like pepper jack. Make gluten-free by using GF flour and breadcrumbs. Great reheated in oven or air fryer!
