- 2 cups frozen or fresh corn kernels (thawed if frozen)
- 1 cup shredded cheddar cheese
- ½ cup cream cheese, softened
- ¼ cup mayonnaise
- 2 tablespoons chopped jalapeños (adjust to taste)
- 2 green onions, finely chopped
- 1 teaspoon chili powder
- ½ teaspoon smoked paprika
- ½ teaspoon garlic powder
- Salt and pepper to taste
- ½ cup all-purpose flour
- 2 large eggs
- 1 cup panko breadcrumbs
- Cooking spray or a little oil for baking
- Optional: Fresh cilantro, chopped
- Optional: Lime wedges
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly spray with cooking spray.
- In a large bowl, mix corn, cheddar cheese, cream cheese, mayonnaise, jalapeños, green onions, chili powder, smoked paprika, garlic powder, salt, and pepper until well combined.
- Scoop about 1 tablespoon of mixture and roll into small balls. Chill for 15–20 minutes if too soft.
- Set up three bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs.
- Roll each ball in flour, dip into egg, and coat with panko breadcrumbs. Place on the prepared baking sheet.
- Lightly spray tops with cooking spray. Bake for 15–18 minutes until golden and crispy.
- Garnish with fresh cilantro and a squeeze of lime juice if desired. Serve warm and enjoy!
Notes
Adjust spice level with more jalapeños or cayenne. Try different cheeses like pepper jack. Make gluten-free by using GF flour and breadcrumbs. Great reheated in oven or air fryer!
