Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and black pepper, to taste
  • 1 tablespoon olive oil
  • 4 slices of bacon, chopped
  • 8 oz mushrooms, sliced (button or cremini work great)
  • 3 cloves garlic, minced
  • 2 cups fresh spinach (or 1 cup frozen, thawed and drained)
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon paprika (optional)

Instructions

  1. Pat chicken breasts dry and season with salt, pepper, and paprika.
  2. Heat olive oil in a skillet over medium heat. Cook chicken 5–7 minutes per side until golden and cooked through. Remove and set aside.
  3. In the same skillet, cook chopped bacon until crispy. Transfer to paper towel-lined plate, leaving 1 tbsp of bacon fat in pan.
  4. Add mushrooms and sauté 4–5 minutes until browned. Stir in garlic and cook 30 seconds.
  5. Add spinach and cook until wilted. Pour in cream and Parmesan. Stir and simmer 2–3 minutes until creamy.
  6. Return chicken and bacon to skillet. Spoon sauce over chicken and simmer 3–4 minutes to meld flavors.
  7. Serve hot with your favorite side dish.

Notes

Try swapping in chicken thighs or pork chops, and spice it up with red pepper flakes or cayenne.
