- 4 boneless, skinless chicken breasts
- Salt and black pepper, to taste
- 1 tablespoon olive oil
- 4 slices of bacon, chopped
- 8 oz mushrooms, sliced (button or cremini work great)
- 3 cloves garlic, minced
- 2 cups fresh spinach (or 1 cup frozen, thawed and drained)
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon paprika (optional)
Instructions
- Pat chicken breasts dry and season with salt, pepper, and paprika.
- Heat olive oil in a skillet over medium heat. Cook chicken 5–7 minutes per side until golden and cooked through. Remove and set aside.
- In the same skillet, cook chopped bacon until crispy. Transfer to paper towel-lined plate, leaving 1 tbsp of bacon fat in pan.
- Add mushrooms and sauté 4–5 minutes until browned. Stir in garlic and cook 30 seconds.
- Add spinach and cook until wilted. Pour in cream and Parmesan. Stir and simmer 2–3 minutes until creamy.
- Return chicken and bacon to skillet. Spoon sauce over chicken and simmer 3–4 minutes to meld flavors.
- Serve hot with your favorite side dish.
Notes
Try swapping in chicken thighs or pork chops, and spice it up with red pepper flakes or cayenne.
