Slow Cooker Rosemary Balsamic Beef Tips

  • 2 lbs beef stew meat or sirloin tips, cut into chunks
  • 1 tablespoon olive oil
  • 1/2 cup balsamic vinegar
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon brown sugar (optional)
  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary, finely chopped (or 1 teaspoon dried)
  • 1 teaspoon onion powder
  • Salt and pepper, to taste
  • 2 tablespoons cornstarch + 2 tablespoons water (optional, for thickening)

Instructions

  1. In a large skillet over medium-high heat, heat olive oil. Add beef tips and sear for 2–3 minutes per side until browned (optional).
  2. Transfer beef to slow cooker.
  3. In a small bowl, whisk together balsamic vinegar, beef broth, Worcestershire sauce, brown sugar, garlic, rosemary, onion powder, salt, and pepper. Pour over beef.
  4. Cover and cook on low for 6–7 hours or high for 3–4 hours until beef is fork-tender.
  5. (Optional) Mix cornstarch and water in a small bowl, stir into slow cooker during the last 30 minutes of cooking to thicken sauce.
  6. Serve over mashed potatoes, rice, or noodles. Enjoy!

Notes

No fresh rosemary? Use 1 teaspoon dried. Add veggies like carrots or mushrooms in the last 2 hours. Serve with mashed potatoes, crusty bread, or noodles.
