Ingredients

- 2 lbs beef stew meat or sirloin tips, cut into chunks
- 1 tablespoon olive oil
- 1/2 cup balsamic vinegar
- 1 cup beef broth
- 1 tablespoon Worcestershire sauce
- 1 tablespoon brown sugar (optional)
- 4 cloves garlic, minced
- 1 tablespoon fresh rosemary, finely chopped (or 1 teaspoon dried)
- 1 teaspoon onion powder
- Salt and pepper, to taste
- 2 tablespoons cornstarch + 2 tablespoons water (optional, for thickening)
Instructions
- In a large skillet over medium-high heat, heat olive oil. Add beef tips and sear for 2–3 minutes per side until browned (optional).
- Transfer beef to slow cooker.
- In a small bowl, whisk together balsamic vinegar, beef broth, Worcestershire sauce, brown sugar, garlic, rosemary, onion powder, salt, and pepper. Pour over beef.
- Cover and cook on low for 6–7 hours or high for 3–4 hours until beef is fork-tender.
- (Optional) Mix cornstarch and water in a small bowl, stir into slow cooker during the last 30 minutes of cooking to thicken sauce.
- Serve over mashed potatoes, rice, or noodles. Enjoy!
Notes
No fresh rosemary? Use 1 teaspoon dried. Add veggies like carrots or mushrooms in the last 2 hours. Serve with mashed potatoes, crusty bread, or noodles.
