- 1.5 lbs baby potatoes (halved or quartered)
- 6–8 garlic cloves (peeled, whole)
- 1 block (7 oz) feta cheese (use a whole block, not crumbled)
- 3 tbsp olive oil
- 1 tsp dried oregano (or Italian seasoning)
- ½ tsp crushed red pepper flakes (optional for heat)
- Salt and black pepper, to taste
- Fresh parsley or basil, for garnish (optional but pretty!)
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, toss the halved potatoes and garlic cloves with 2 tablespoons olive oil, oregano, salt, and pepper. Spread in a single layer on the baking sheet.
- Nestle the block of feta in the center of the tray. Drizzle with the remaining 1 tablespoon olive oil and sprinkle with red pepper flakes, if using.
- Bake for 35–40 minutes, until potatoes are golden and crispy, and garlic is soft and fragrant.
- Remove from oven and gently toss everything to coat in the melty feta and garlic. Garnish with fresh herbs and serve warm.
Notes
Want it extra golden? A sprinkle of paprika before baking works wonders. Try tossing in cherry tomatoes or red onion for a veggie boost. Leftovers are amazing stirred into scrambled eggs or wrapped up for lunch.
