Roasted Potatoes with Baked Feta and Garlic

There’s just something magical about crispy roasted potatoes mingling with warm, creamy feta and roasted garlic. This dish is everything you want in a comfort food side: rich, savory, and packed with flavor. Perfect for weeknight dinners, brunch spreads, or even as a show-stealing appetizer.

Ingredients

  • 1.5 lbs baby potatoes (halved or quartered)
  • 68 garlic cloves (peeled, whole)
  • 1 block (7 oz) feta cheese (use a whole block, not crumbled)
  • 3 tbsp olive oil
  • 1 tsp dried oregano (or Italian seasoning)
  • ½ tsp crushed red pepper flakes (optional for heat)
  • Salt and black pepper, to taste
  • Fresh parsley or basil, for garnish (optional but pretty!)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss the halved potatoes and garlic cloves with 2 tablespoons olive oil, oregano, salt, and pepper. Spread in a single layer on the baking sheet.
  3. Nestle the block of feta in the center of the tray. Drizzle with the remaining 1 tablespoon olive oil and sprinkle with red pepper flakes, if using.
  4. Bake for 35–40 minutes, until potatoes are golden and crispy, and garlic is soft and fragrant.
  5. Remove from oven and gently toss everything to coat in the melty feta and garlic. Garnish with fresh herbs and serve warm.

Notes

Want it extra golden? A sprinkle of paprika before baking works wonders. Try tossing in cherry tomatoes or red onion for a veggie boost. Leftovers are amazing stirred into scrambled eggs or wrapped up for lunch.
