- 1 cup graham cracker crumbs (about 8 full sheets)
- 2 tablespoons granulated sugar
- 4 tablespoons unsalted butter, melted
- 8 oz cream cheese, softened
- 1/2 cup sweetened condensed milk
- 1/4 cup plain Greek yogurt or sour cream
- 1/4 cup key lime juice (fresh or bottled)
- 1 teaspoon lime zest
- 1/2 teaspoon vanilla extract
- Optional: Whipped cream
- Optional: Extra lime zest or slices
- Optional: Crushed graham crackers
Instructions
- In a bowl, mix graham cracker crumbs and sugar. Pour in melted butter and stir until mixture resembles wet sand.
- Spoon about 2 tablespoons of crust mixture into each jar. Press gently to form a layer.
- In a large bowl, beat cream cheese until smooth. Add sweetened condensed milk, Greek yogurt, key lime juice, lime zest, and vanilla extract. Beat until silky and combined.
- Spoon or pipe cheesecake filling over crust layer in jars. Smooth the tops.
- Cover and refrigerate jars for at least 2–3 hours, or overnight.
- Top with whipped cream, lime zest, or slices just before serving.
Notes
Room temperature cream cheese makes the filling extra smooth. Chill the crust briefly before adding filling for a firmer base. Try crushed cookies or fruit layers for variations!
