- 1 ½ cups mashed overripe bananas (about 3–4)

- ½ cup unsalted butter (melted)

- 1 teaspoon vanilla extract
- ¼ cup sour cream or yogurt (optional)

Instructions
- Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan or line with parchment paper.
- In a large bowl, mash the bananas until smooth.
- Add melted butter, brown sugar, white sugar, eggs, vanilla extract, and sour cream if using. Mix until fully combined.
- In a separate bowl, whisk together flour, baking soda, and salt.
- Gradually fold the dry ingredients into the wet ingredients. Stir just until combined—do not overmix.
- Stir in optional mix-ins like chocolate chips or nuts.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50–60 minutes or until a toothpick inserted in the center comes out clean.
- Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
For extra moisture, use very ripe bananas and avoid overmixing the batter. You can also use coconut oil for a dairy-free version.
