  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¼ cup sour cream or yogurt (optional)
  • ½ cup chopped nuts or chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan or line with parchment paper.
  2. In a large bowl, mash the bananas until smooth.
  3. Add melted butter, brown sugar, white sugar, eggs, vanilla extract, and sour cream if using. Mix until fully combined.
  4. In a separate bowl, whisk together flour, baking soda, and salt.
  5. Gradually fold the dry ingredients into the wet ingredients. Stir just until combined—do not overmix.
  6. Stir in optional mix-ins like chocolate chips or nuts.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 50–60 minutes or until a toothpick inserted in the center comes out clean.
  9. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

For extra moisture, use very ripe bananas and avoid overmixing the batter. You can also use coconut oil for a dairy-free version.
