- 1 lb ground beef (lean or regular)
- 2 tablespoons olive oil
- 1 small red onion, thinly sliced
- 3 garlic cloves, minced
- 1 red bell pepper, sliced
- 1 cup cherry tomatoes, halved
- ½ cup pitted Kalamata olives, halved
- 1 teaspoon dried oregano
- ½ teaspoon ground cumin
- Salt and black pepper to taste
- Juice of ½ lemon
- 2 tablespoons chopped fresh parsley (optional, for garnish)
- Crumbled feta cheese (optional, for topping)
Instructions
- In a large skillet over medium heat, add the olive oil. Once hot, sauté the sliced red onion for 2–3 minutes until slightly softened.
- Add the ground beef to the skillet. Break it up with a spatula and cook until fully browned, about 5–7 minutes. Drain any excess fat if needed.
- Stir in the minced garlic, oregano, cumin, salt, and pepper. Cook for 1–2 minutes until fragrant.
- Add the bell pepper, cherry tomatoes, and olives. Cook for another 4–5 minutes until the veggies are tender and the tomatoes are slightly blistered.
- Squeeze in the lemon juice and stir everything together. Taste and adjust seasoning as needed.
- Remove from heat, sprinkle with fresh parsley and crumbled feta if using, and serve warm.
Notes
Try ground turkey or plant-based crumbles for variation. Add zucchini or spinach, or spice it up with red pepper flakes. Store leftovers in the fridge for up to 4 days or freeze for up to 2 months.
