Ingredients

  • 1 lb ground beef (lean or regular)
  • 2 tablespoons olive oil
  • 1 small red onion, thinly sliced
  • 3 garlic cloves, minced
  • 1 red bell pepper, sliced
  • 1 cup cherry tomatoes, halved
  • ½ cup pitted Kalamata olives, halved
  • 1 teaspoon dried oregano
  • ½ teaspoon ground cumin
  • Salt and black pepper to taste
  • Juice of ½ lemon
  • 2 tablespoons chopped fresh parsley (optional, for garnish)
  • Crumbled feta cheese (optional, for topping)

Instructions

  1. In a large skillet over medium heat, add the olive oil. Once hot, sauté the sliced red onion for 2–3 minutes until slightly softened.
  2. Add the ground beef to the skillet. Break it up with a spatula and cook until fully browned, about 5–7 minutes. Drain any excess fat if needed.
  3. Stir in the minced garlic, oregano, cumin, salt, and pepper. Cook for 1–2 minutes until fragrant.
  4. Add the bell pepper, cherry tomatoes, and olives. Cook for another 4–5 minutes until the veggies are tender and the tomatoes are slightly blistered.
  5. Squeeze in the lemon juice and stir everything together. Taste and adjust seasoning as needed.
  6. Remove from heat, sprinkle with fresh parsley and crumbled feta if using, and serve warm.

Notes

Try ground turkey or plant-based crumbles for variation. Add zucchini or spinach, or spice it up with red pepper flakes. Store leftovers in the fridge for up to 4 days or freeze for up to 2 months.
