  • 1 ¼ cups all-purpose flour
  • ½ cup light brown sugar, packed
  • ¼ teaspoon salt
  • ½ teaspoon baking soda
  • ¾ cup unsalted butter, melted
  • 1 (14 oz) can sweetened condensed milk
  • ⅓ cup fresh lemon juice (about 23 lemons)
  • 1 tablespoon lemon zest
  • 1 large egg yolk
  • Optional: powdered sugar for dusting after baking

Instructions

  1. Preheat the oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal.
  2. In a large bowl, combine oats, flour, brown sugar, salt, and baking soda. Pour in the melted butter and stir until the mixture is evenly moistened and crumbly.
  3. Take about 2/3 of the oat mixture and press it firmly into the bottom of the prepared pan. Use the back of a measuring cup or spoon to pack it down evenly.
  4. In a medium bowl, whisk together the sweetened condensed milk, lemon juice, lemon zest, and egg yolk until smooth and creamy.
  5. Pour the lemon filling over the crust and spread evenly with a spatula. Sprinkle the remaining oat mixture on top for a crumbly topping.
  6. Bake for 25–30 minutes, or until the edges are lightly golden and the center is set.
  7. Let the bars cool at room temperature, then chill in the fridge for at least 1 hour before slicing for cleaner edges.
  8. Dust with powdered sugar (optional) just before serving.

Use fresh lemons for the best flavor. Chill before slicing for cleaner bars. Try adding coconut, berries, or swapping citrus for a fun variation.
