- 1 ½ cups old-fashioned rolled oats
- 1 ¼ cups all-purpose flour
- ½ cup light brown sugar, packed
- ¼ teaspoon salt
- ½ teaspoon baking soda
- ¾ cup unsalted butter, melted
- 1 (14 oz) can sweetened condensed milk
- ⅓ cup fresh lemon juice (about 2–3 lemons)
- 1 tablespoon lemon zest
- 1 large egg yolk
- Optional: powdered sugar for dusting after baking
Instructions
- Preheat the oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal.
- In a large bowl, combine oats, flour, brown sugar, salt, and baking soda. Pour in the melted butter and stir until the mixture is evenly moistened and crumbly.
- Take about 2/3 of the oat mixture and press it firmly into the bottom of the prepared pan. Use the back of a measuring cup or spoon to pack it down evenly.
- In a medium bowl, whisk together the sweetened condensed milk, lemon juice, lemon zest, and egg yolk until smooth and creamy.
- Pour the lemon filling over the crust and spread evenly with a spatula. Sprinkle the remaining oat mixture on top for a crumbly topping.
- Bake for 25–30 minutes, or until the edges are lightly golden and the center is set.
- Let the bars cool at room temperature, then chill in the fridge for at least 1 hour before slicing for cleaner edges.
- Dust with powdered sugar (optional) just before serving.
Notes
Use fresh lemons for the best flavor. Chill before slicing for cleaner bars. Try adding coconut, berries, or swapping citrus for a fun variation.
