  • 4 flour tortillas
  • 1/2 cup shredded lettuce
  • 1/2 cup diced mango
  • 1/4 cup red onions, sliced
  • 1/4 cup bell peppers, sliced
  • 1/2 avocado, mashed
  • 1/4 cup mayonnaise-based jerk sauce
  • 1 tablespoon cilantro, chopped
  • 1 teaspoon lime juice

Instructions

  1. Blend the Scotch bonnet peppers, allspice, garlic, ginger, soy sauce, vinegar, brown sugar, thyme, lime juice, salt, and black pepper until smooth.
  2. Coat the chicken evenly with the marinade and refrigerate for at least 2-4 hours (overnight for deeper flavor).
  3. Grill the chicken over medium-high heat for 5-7 minutes per side until charred and fully cooked. Alternatively, bake at 400°F (200°C) for 20-25 minutes or sear in a pan for 6-8 minutes per side.
  4. Let the chicken rest for 5 minutes, then slice into thin strips.
  5. Warm the tortillas and spread a layer of mashed avocado or jerk sauce.
