- 1 lb ground beef (80/20 for juiciness)
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp garlic powder
- 4 slices sharp Irish cheddar cheese (like Dubliner)
- 1 small red onion, thinly sliced and fried or caramelized
- 4 brioche buns, toasted
- Lettuce leaves (optional)
- Tomato slices (optional)
- ¼ cup mayonnaise
- 1 tbsp whole grain mustard or Dijon
- 1 tsp Worcestershire sauce
- 1 tbsp Guinness (optional)
Instructions
- In a small bowl, mix together mayo, mustard, Worcestershire sauce, and Guinness (if using). Set aside.
- Thinly slice the red onion. Sauté in a pan with oil until golden and soft, or fry for a crispier texture.
- Divide ground beef into 4 equal portions and shape into patties. Season both sides with salt, pepper, and garlic powder.
- Heat a skillet or grill over medium-high heat. Cook patties for 3–4 minutes per side. In the last minute of cooking, add cheese slices and cover to melt.
- Toast brioche buns in a dry skillet or under the broiler until golden.
- Assemble: Spread sauce on bottom bun, add lettuce and tomato (if using), then patty with melted cheese, followed by onions. Top with bun lid and serve hot.
Notes
For extra flavor, try adding crispy bacon, pickles, or a fried egg. Use aged cheddar if Irish cheese isn’t available. Swap Guinness for balsamic vinegar in the sauce if preferred.
