- 3 medium overripe bananas, mashed
- 2 large eggs
- 1/3 cup melted butter (unsalted)
- 1/2 cup honey
- 1 1/2 teaspoons pure vanilla extract
- 1 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon ground cinnamon (optional)
- 1/4 teaspoon salt
- Optional: 1/2 cup chopped walnuts or pecans
- Optional: 1/2 cup dark chocolate chips
Instructions
- Preheat your oven to 350°F (175°C). Lightly grease a 9×5-inch loaf pan or line with parchment paper.
- Mash the bananas in a large mixing bowl until mostly smooth.
- Add the eggs, melted butter, honey, and vanilla extract. Mix until well combined.
- Sprinkle in the flour, baking soda, cinnamon (if using), and salt. Gently fold until just combined.
- If using, fold in nuts or chocolate chips.
- Pour batter into the prepared pan and smooth the top.
- Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
Use overripe bananas for the best flavor and moisture. Avoid overmixing to keep the loaf tender. Let it cool before slicing to avoid crumbling.
