- 1 lb ground beef (lean or regular)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 8 oz mushrooms, sliced (button or cremini)
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp Italian seasoning (optional)
- 1 can (10.5 oz) cream of mushroom soup
- ½ cup sour cream
- 1 cup shredded cheddar cheese (or mozzarella)
- 2 cups cooked pasta (penne, rotini, or egg noodles)
- Cooking spray or butter for greasing the baking dish
- Optional: Extra cheese for topping, fresh parsley for garnish
Instructions
- Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- In a large skillet over medium heat, cook ground beef until browned. Drain excess fat.
- Add onion, garlic, and mushrooms. Sauté for 5–7 minutes until tender and fragrant.
- Season with salt, pepper, and Italian seasoning.
- Reduce heat and stir in cream of mushroom soup and sour cream until creamy.
- Add cooked pasta and stir to coat everything evenly.
- Transfer to the baking dish and top with shredded cheese.
- Bake uncovered for 20–25 minutes until cheese is melted and bubbly. Broil for 2–3 minutes if desired.
- Let rest 5 minutes, garnish with parsley, and serve warm.
Notes
You can swap the ground beef with turkey or chicken, use Greek yogurt instead of sour cream, or add in extra vegetables like spinach or peas for more nutrition.
