  • 2 medium zucchinis, sliced into half-moons

  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • ½ teaspoon paprika (optional)
  • Salt and pepper, to taste
  • ¼ cup chicken broth or water (optional)
  • Fresh parsley or basil, chopped (for garnish)

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the diced onion and cook for 2–3 minutes until softened.
  2. Stir in the minced garlic and cook for 30 seconds. Add the ground turkey and cook for 5–7 minutes, breaking it up, until no longer pink.
  3. Sprinkle in Italian seasoning, paprika (if using), salt, and pepper. Stir to combine.
  4. Add the sliced zucchini and cook for another 5–6 minutes, stirring occasionally, until tender.
  5. If desired, pour in chicken broth or water for added moisture and let simmer for a few minutes.
  6. Remove from heat, garnish with fresh parsley or basil, and serve hot.
