- 1 lb ground chicken
- 1/4 cup finely chopped red onion
- 2 cloves garlic, minced
- 1/4 cup chopped fresh parsley
- 1 tsp dried oregano
- Zest of 1 lemon
- 1 tbsp fresh lemon juice
- 1/4 cup crumbled feta cheese (optional)
- 1/3 cup breadcrumbs (use gluten-free if needed)
- 1 egg
- Salt and pepper to taste
- Olive oil spray (for baking)
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with olive oil spray.
- In a large bowl, combine ground chicken, red onion, garlic, parsley, oregano, lemon zest, lemon juice, feta (if using), breadcrumbs, egg, salt, and pepper. Mix until just combined.
- Scoop out about 1 1/2 tablespoons of the mixture and roll into balls. Place on the prepared baking sheet.
- Bake for 18–20 minutes, or until golden brown and cooked through (165°F / 74°C internal temperature).
- Optional: Broil for the last 2 minutes for extra color.
Notes
Skip the feta for a dairy-free version or swap it with goat cheese. Add grated zucchini or chopped spinach for extra veggies. These are great with hummus, in a pita, or on salad.
