  • 1 tsp ground cumin
  • ½ tsp paprika
  • Salt and pepper to taste
  • 1 cup plain Greek yogurt
  • ½ cucumber, grated and squeezed dry
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 clove garlic, finely minced
  • 1 tbsp chopped fresh dill (or 1 tsp dried)
  • Salt to taste
  • 2 cups cooked white or brown rice (or quinoa)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • ½ red onion, thinly sliced
  • ½ cup crumbled feta cheese
  • ¼ cup kalamata olives (optional)
  • Fresh parsley or dill for garnish

Instructions

  1. In a bowl or zip-top bag, combine olive oil, lemon juice, garlic, oregano, cumin, paprika, salt, and pepper. Add chicken and coat well. Marinate for at least 30 minutes or up to 8 hours in the fridge.
  2. Heat a skillet or grill pan over medium-high heat. Cook chicken for 5–6 minutes per side or until cooked through. Let rest 5 minutes, then slice into strips.
  3. While chicken cooks, mix Greek yogurt, grated cucumber, olive oil, lemon juice, garlic, dill, and salt. Chill until ready to use.
  4. Start with a base of cooked rice. Top with chicken, cherry tomatoes, cucumber, red onion, feta, and olives. Drizzle with tzatziki sauce and garnish with fresh herbs.
