Ingredients

- 1 lb boneless, skinless chicken thighs or breasts
- 3 tbsp olive oil
- Juice of 1 lemon
- 3 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp ground cumin
- ½ tsp paprika
- Salt and pepper to taste
- 1 cup plain Greek yogurt
- ½ cucumber, grated and squeezed dry
- 1 tbsp olive oil
- 1 tbsp lemon juice
- 1 clove garlic, finely minced
- 1 tbsp chopped fresh dill (or 1 tsp dried)
- Salt to taste
- 2 cups cooked white or brown rice (or quinoa)
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- ½ red onion, thinly sliced
- ½ cup crumbled feta cheese
- ¼ cup kalamata olives (optional)
- Fresh parsley or dill for garnish
Instructions
- In a bowl or zip-top bag, combine olive oil, lemon juice, garlic, oregano, cumin, paprika, salt, and pepper. Add chicken and coat well. Marinate for at least 30 minutes or up to 8 hours in the fridge.
- Heat a skillet or grill pan over medium-high heat. Cook chicken for 5–6 minutes per side or until cooked through. Let rest 5 minutes, then slice into strips.
- While chicken cooks, mix Greek yogurt, grated cucumber, olive oil, lemon juice, garlic, dill, and salt. Chill until ready to use.
- Start with a base of cooked rice. Top with chicken, cherry tomatoes, cucumber, red onion, feta, and olives. Drizzle with tzatziki sauce and garnish with fresh herbs.
