- 1 ½ lbs ground chicken
- ¾ cup breadcrumbs (plain or Italian-style)
- ½ cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 egg
- 1 small onion, finely chopped
- ¼ cup milk
- 1 tablespoon fresh parsley, chopped (or 1 tsp dried)
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon dried Italian seasoning
- Optional: ¼ cup shredded mozzarella (for a melty center!)
- Optional topping: Extra Parmesan or a drizzle of garlic butter
Instructions
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
- Optional: In a small pan, sauté chopped onion and minced garlic until soft and fragrant—about 3–4 minutes. Let it cool slightly.
- In a large bowl, combine ground chicken, breadcrumbs, Parmesan, egg, sautéed (or raw) onion and garlic, milk, parsley, salt, pepper, and Italian seasoning. Mix gently until just combined.
- Shape the mixture into a loaf on your prepared baking sheet or press it into a loaf pan. If using mozzarella, create a shallow trench in the center, fill with cheese, and seal with more meat mixture.
- Bake for 40–45 minutes or until internal temperature reaches 165°F (74°C). In the last 5 minutes, top with extra Parmesan or brush with garlic butter if desired.
- Let rest for 5–10 minutes before slicing and serving.
Notes
Great for leftovers and meal prep. For a chicken parm-style topping, add marinara and mozzarella before baking.
