  • 1 ½ lbs ground chicken
  • ¾ cup breadcrumbs (plain or Italian-style)
  • ½ cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 egg
  • 1 small onion, finely chopped
  • ¼ cup milk
  • 1 tablespoon fresh parsley, chopped (or 1 tsp dried)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon dried Italian seasoning
  • Optional: ¼ cup shredded mozzarella (for a melty center!)
  • Optional topping: Extra Parmesan or a drizzle of garlic butter

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
  2. Optional: In a small pan, sauté chopped onion and minced garlic until soft and fragrant—about 3–4 minutes. Let it cool slightly.
  3. In a large bowl, combine ground chicken, breadcrumbs, Parmesan, egg, sautéed (or raw) onion and garlic, milk, parsley, salt, pepper, and Italian seasoning. Mix gently until just combined.
  4. Shape the mixture into a loaf on your prepared baking sheet or press it into a loaf pan. If using mozzarella, create a shallow trench in the center, fill with cheese, and seal with more meat mixture.
  5. Bake for 40–45 minutes or until internal temperature reaches 165°F (74°C). In the last 5 minutes, top with extra Parmesan or brush with garlic butter if desired.
  6. Let rest for 5–10 minutes before slicing and serving.

Notes

Great for leftovers and meal prep. For a chicken parm-style topping, add marinara and mozzarella before baking.
