- 3 large eggs, separated
- ¼ teaspoon cream of tartar
- 1 tablespoon cornstarch
- Pinch of salt (optional)
Instructions
- Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
- Blend the cottage cheese in a food processor or blender until smooth. Set aside.
- Separate the eggs, placing the yolks in one bowl and the whites in another.
- Whip the egg whites: Add the cream of tartar to the egg whites and beat until stiff peaks form.
- Mix the yolks: Combine the egg yolks with the blended cottage cheese, cornstarch, and salt.
- Fold gently: Carefully fold the egg whites into the yolk mixture in batches, keeping the mixture fluffy.
- Scoop and shape: Spoon the batter onto the baking sheet in even rounds.
- Bake for 25–30 minutes until golden and set.
- Cool on the tray for 5–10 minutes, then transfer to a wire rack.
Notes
Use full-fat cottage cheese for best results. Make sure to whip the egg whites to stiff peaks and fold gently to maintain fluffiness. For variations, add herbs, sweeteners, or cheese to the batter.
