- ¼ cup cooked bacon bits or breakfast sausage (optional)
- ¼ cup diced bell peppers (optional)
- Salt and pepper, to taste
- Butter or oil for cooking
- Optional garnish: green onions, hot sauce, or fresh herbs
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easy cleanup.
- Toast the English muffins lightly in a toaster or oven until just golden. This helps prevent sogginess when you add the toppings.
- Cook the eggs your way — scrambled works best. Heat a bit of butter or oil in a skillet over medium heat, scramble the eggs until just set, and season with salt and pepper.
- Assemble the pizzas: Place toasted muffin halves on the baking sheet. Top each with scrambled eggs, then sprinkle with cheese, bacon or sausage, and veggies if using.
- Bake for 5–7 minutes, or until the cheese is melted and bubbly.
- Garnish and serve: Add green onions, a dash of hot sauce, or fresh herbs for extra flavor. Serve warm!
