- 2–3 boneless, skinless chicken breasts
- 1 can (10.5 oz) cream of chicken soup
- 1 can (10 oz) Rotel (diced tomatoes with green chilies)
- 8 oz block of cream cheese, cubed
- 2 cups shredded cheddar cheese
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp paprika (optional)
- Salt and pepper to taste
- 8 oz spaghetti, broken in half
- 1 cup chicken broth or water
Instructions
- Place chicken breasts in the bottom of your crockpot.
- Add cream of chicken soup, Rotel, cubed cream cheese, garlic powder, onion powder, paprika (if using), salt, and pepper on top of the chicken.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the chicken is fully cooked and tender.
- Remove the chicken, shred it with two forks, and return it to the crockpot. Stir well.
- Break spaghetti in half and stir it into the mixture along with 1 cup of chicken broth or water. Ensure the pasta is mostly covered.
- Cover and cook on HIGH for 30–40 minutes, stirring once or twice to prevent sticking, until the spaghetti is tender.
- Sprinkle in the shredded cheddar, stir until melted and everything is creamy and cheesy.
- Serve hot and garnish as desired.
Notes
Swap with rotisserie chicken for faster prep. Add jalapeños or cayenne for spice. Stir in veggies like mushrooms, spinach, or bell peppers for a nutrient boost. Use a mix of cheeses or gluten-free pasta as needed.
