  • 23 boneless, skinless chicken breasts
  • 1 can (10.5 oz) cream of chicken soup
  • 1 can (10 oz) Rotel (diced tomatoes with green chilies)
  • 8 oz block of cream cheese, cubed
  • 2 cups shredded cheddar cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp paprika (optional)
  • Salt and pepper to taste
  • 8 oz spaghetti, broken in half
  • 1 cup chicken broth or water

Instructions

  1. Place chicken breasts in the bottom of your crockpot.
  2. Add cream of chicken soup, Rotel, cubed cream cheese, garlic powder, onion powder, paprika (if using), salt, and pepper on top of the chicken.
  3. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the chicken is fully cooked and tender.
  4. Remove the chicken, shred it with two forks, and return it to the crockpot. Stir well.
  5. Break spaghetti in half and stir it into the mixture along with 1 cup of chicken broth or water. Ensure the pasta is mostly covered.
  6. Cover and cook on HIGH for 30–40 minutes, stirring once or twice to prevent sticking, until the spaghetti is tender.
  7. Sprinkle in the shredded cheddar, stir until melted and everything is creamy and cheesy.
  8. Serve hot and garnish as desired.

Notes
