- 1 cup cottage cheese (small curd works best)
- 1 egg
- ½ cup shredded mozzarella cheese
- ⅓ cup almond flour (or breadcrumbs for a crunchier finish)
- 2 tablespoons chopped green onions (optional)
- ½ teaspoon garlic powder
- ¼ teaspoon black pepper
- Pinch of salt
- Olive oil spray or 1–2 tablespoons for pan-frying
- Optional toppings: grated Parmesan, fresh herbs, or a drizzle of hot honey
Instructions
- Drain the cottage cheese using a fine mesh strainer or cheesecloth to remove excess liquid.
- In a mixing bowl, combine cottage cheese, egg, mozzarella, almond flour (or breadcrumbs), green onions, garlic powder, pepper, and salt. Mix well.
- Form the mixture into small patties or bites using hands or a cookie scoop.
- To cook:
- Pan-Fry: Heat 1–2 tablespoons olive oil in a skillet over medium heat. Cook 2–3 minutes per side until golden and crispy.
- Bake: Preheat oven to 400°F (200°C). Place patties on parchment-lined baking sheet, spray with oil, and bake 15–18 minutes, flipping halfway.
- Air Fryer: Preheat to 375°F (190°C). Cook for 8–10 minutes, shaking halfway through.
- Let cool slightly and serve warm with your favorite dipping sauce or enjoy as-is.
Notes
For best results, drain cottage cheese well and avoid overcrowding the cooking surface to achieve maximum crispiness.
