  • Salt and pepper to taste
  • 1 tablespoon olive oil (for crisping)
  • 1 medium head of cauliflower (or 1 bag of pre-riced cauliflower)
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Chop cauliflower into florets or use pre-riced. Toss with olive oil, garlic powder, salt, and pepper. Roast 20–25 minutes, stirring halfway.
  3. Heat olive oil in skillet over medium-high heat. Add ground beef, breaking it up with a spoon. Cook 6–8 minutes until browned and crisping.
  4. Stir in chili powder, smoked paprika, cumin, garlic powder, onion powder, salt, and pepper. Cook 2–3 more minutes until fragrant and crispy.
  5. Divide roasted cauliflower between bowls. Top with crispy beef and desired toppings like avocado, lime, or hot sauce.

Notes
