- 1 tablespoon olive oil (for crisping)
- 1 medium head of cauliflower (or 1 bag of pre-riced cauliflower)
- 1 tablespoon olive oil

Instructions
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Chop cauliflower into florets or use pre-riced. Toss with olive oil, garlic powder, salt, and pepper. Roast 20–25 minutes, stirring halfway.
- Heat olive oil in skillet over medium-high heat. Add ground beef, breaking it up with a spoon. Cook 6–8 minutes until browned and crisping.
- Stir in chili powder, smoked paprika, cumin, garlic powder, onion powder, salt, and pepper. Cook 2–3 more minutes until fragrant and crispy.
- Divide roasted cauliflower between bowls. Top with crispy beef and desired toppings like avocado, lime, or hot sauce.
Notes
Customize with your favorite toppings or swap in ground turkey for a leaner option. Keeps well in the fridge for up to 4 days.
