- 1 lb (450g) ground chicken or turkey (or beef)
- 1/4 cup breadcrumbs
- 1 egg
- 2 cloves garlic, minced
- 1/2 tsp ground ginger
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil or coconut oil
- 1/2 onion, finely chopped
- 2 cloves garlic, minced
- 1 tbsp grated fresh ginger (or 1 tsp ground ginger)
- 1 tbsp curry powder
- 1/2 tsp ground turmeric (optional)
- 1 can (13.5 oz) full-fat coconut milk
- 1/2 cup chicken broth or water
- 1 tbsp lime juice
- Salt to taste
- Fresh cilantro for garnish (optional)
Instructions
- In a large bowl, mix ground meat, breadcrumbs, egg, garlic, ginger, salt, and pepper until just combined.
- Form into 1-inch meatballs and set aside.
- Heat oil in a large skillet over medium heat and brown the meatballs on all sides for 5–7 minutes. Set aside.
- In the same skillet, sauté onion until soft (about 3–4 minutes).
- Add garlic, ginger, curry powder, and turmeric; cook for 1 minute until fragrant.
- Pour in coconut milk and broth, scraping any browned bits, and bring to a simmer.
- Return meatballs to the pan, cover, and simmer on low for 15–20 minutes until cooked through and sauce thickens.
- Stir in lime juice and season with salt to taste.
- Garnish with cilantro and serve with rice or naan.
Notes
Use full-fat coconut milk for the creamiest texture. Try adding veggies like spinach or peas to bulk it up!
