- 2 cups all-purpose flour
- 2 cups old-fashioned rolled oats
- 1 teaspoon baking soda

- 1 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 3/4 cup brown sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups chocolate chips
- 1 cup shredded coconut
- 1 cup chopped pecans
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a bowl, whisk together flour, oats, baking soda, cinnamon, and salt.
- In a separate large bowl, beat butter, granulated sugar, and brown sugar until creamy.
- Add eggs one at a time, then mix in vanilla extract.
- Gradually mix in dry ingredients until combined.
- Fold in chocolate chips, shredded coconut, and chopped pecans.
- Drop rounded tablespoons of dough onto the baking sheet, spacing them 2 inches apart.
- Bake for 10-12 minutes or until edges are golden brown.
- Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.
Notes
Store cookies in an airtight container at room temperature for up to a week. Dough can be frozen for later use.
