- 1 cup cornmeal

- 1¼ cups buttermilk
- ¼ cup melted butter (plus more for greasing)
- ¼ cup unsalted butter (for syrup)
- ¼ cup honey
- 2 tablespoons maple syrup (optional)
- A pinch of cinnamon (optional)
Instructions
- Preheat your waffle maker. If it has adjustable settings, medium-high works best.
- In a large bowl, whisk together cornmeal, flour, baking powder, baking soda, salt, and sugar.
- In a separate bowl, beat the eggs, then stir in buttermilk and melted butter. Pour into the dry ingredients and mix just until combined—don’t overmix!
- Grease the waffle maker lightly with butter or nonstick spray.
- Use a tablespoon or small cookie scoop to create mini waffles. Cook for 3–5 minutes or until golden and crisp on the outside.
- In a small saucepan over low heat, melt the butter. Stir in the honey, maple syrup (if using), and cinnamon. Warm through, then remove from heat.
- Drizzle the warm honey butter syrup over freshly made waffle bites and enjoy!
