- 1 cup finely chopped fresh pineapple (or canned, well-drained)
- 1 ½ cups unsweetened shredded coconut (plus extra for rolling)
- ½ cup almond flour (or oat flour for nut-free option)
- 2 tablespoons maple syrup or honey
- 1 teaspoon vanilla extract
- Pinch of sea salt
- Optional: 1 tablespoon chia seeds or ground flaxseed
Instructions
- Finely chop your pineapple and gently blot with a paper towel to remove excess moisture.
- In a medium bowl, combine the chopped pineapple, shredded coconut, almond flour, maple syrup (or honey), vanilla extract, and a pinch of salt. Add chia or flaxseed if using. Stir until well mixed and slightly sticky.
- Scoop out tablespoon-sized portions and roll them into balls. Chill mixture for 10 minutes if too sticky.
- Roll each ball in shredded coconut for coating.
- Place on parchment-lined tray and refrigerate for at least 30 minutes to firm up.
Notes
For best results, use pineapple that’s not overly juicy—pat it dry. You can customize these bites with added lime zest, dried fruit, or protein powder.
