- 3 tablespoons unsalted butter
- 1 (10 oz) bag mini marshmallows (about 6 cups)
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon coconut extract (optional)
- 6 cups Rice Krispies cereal
- 1 cup sweetened shredded coconut
- 1/2 cup toasted coconut (for topping)
- Pinch of salt
Instructions
- Lightly grease a 9×13-inch baking dish or line it with parchment paper.
- In a large saucepan over low heat, melt the butter.
- Add the mini marshmallows and stir until melted and smooth.
- Stir in vanilla extract, coconut extract (if using), and a pinch of salt.
- Remove from heat and stir in Rice Krispies cereal and shredded coconut until combined.
- Transfer mixture to the prepared pan and press down gently using a greased spatula or wax paper.
- Sprinkle toasted coconut on top and press lightly to help it stick.
- Let cool at room temperature for 30–45 minutes, then cut into squares and serve.
Notes
Use fresh marshmallows for best results. Don’t press too hard when shaping—keep them fluffy and chewy. Try adding mini chocolate chips or chopped nuts for variation.
