- 1/2 cup (1 stick) unsalted butter, melted
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/3 cup unsweetened cocoa powder
- 1/2 cup all-purpose flour
- 1/4 tsp salt
- 1/4 tsp baking powder
- 1–1.5 cups fresh strawberries, hulled and halved (or sliced if large)
- 1/2 cup semi-sweet chocolate chips or chopped chocolate
- 1 tbsp coconut oil or butter
Instructions
- Preheat the oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.
- In a medium bowl, whisk together melted butter and sugar. Add eggs and vanilla, whisk until smooth.
- Stir in cocoa powder, flour, salt, and baking powder until just combined.
- Pour batter into the prepared pan and spread evenly. Bake for 20–25 minutes, until a toothpick comes out with a few moist crumbs. Let cool completely.
- Arrange sliced strawberries in a single layer over the cooled brownies. Press them gently into the surface.
- In a microwave-safe bowl, melt chocolate chips and coconut oil in 20-second intervals, stirring until smooth.
- Pour melted chocolate over the strawberries, spreading to cover them all.
- Refrigerate brownies for 20–30 minutes to set the chocolate before slicing.
Notes
Let the brownies cool completely before adding the strawberries and melted chocolate. Use parchment paper for easy removal and clean slicing. Try raspberries or cherries for a fruity variation.
