Instructions

  1. Preheat the oven to 325°F (163°C). Line an 8×8-inch baking pan with parchment paper, leaving an overhang.
  2. In a medium bowl, mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of the pan. Bake for 8–10 minutes, then let cool slightly.
  3. In a large bowl, beat cream cheese, sugar, and vanilla until smooth. Add eggs one at a time, mixing just until combined.
  4. Pour the cheesecake mixture over the crust and smooth the top. Sprinkle chocolate chips evenly on top.
  5. Bake for 30–35 minutes, until the center is set but slightly jiggly. Edges should be lightly golden.
  6. Let bars cool completely at room temperature. Chill in the fridge for at least 2 hours or overnight.
  7. Lift using parchment, slice into squares, and serve.
