- 1 ½ cups graham cracker crumbs
- ¼ cup granulated sugar
- ½ cup (1 stick) unsalted butter, melted
- 16 oz cream cheese (softened)
- ½ cup granulated sugar
- 1 tsp vanilla extract
- 2 large eggs
- 1 cup semi-sweet chocolate chips
- Optional: a sprinkle of sea salt
Instructions
- Preheat the oven to 325°F (163°C). Line an 8×8-inch baking pan with parchment paper, leaving an overhang.
- In a medium bowl, mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of the pan. Bake for 8–10 minutes, then let cool slightly.
- In a large bowl, beat cream cheese, sugar, and vanilla until smooth. Add eggs one at a time, mixing just until combined.
- Pour the cheesecake mixture over the crust and smooth the top. Sprinkle chocolate chips evenly on top.
- Bake for 30–35 minutes, until the center is set but slightly jiggly. Edges should be lightly golden.
- Let bars cool completely at room temperature. Chill in the fridge for at least 2 hours or overnight.
- Lift using parchment, slice into squares, and serve.
Notes
Use room temperature cream cheese for a smooth filling. Don’t overmix after adding eggs to avoid cracking. Use a warm knife for clean slices. Try adding nuts or using different chocolate chips for variation.
