Ingredients

- 2 slices of your favorite bread (sourdough, whole grain, or ciabatta)
- 1/2 ripe avocado, sliced or mashed
- 1/2 cup cooked chicken breast, shredded or sliced
- 2 slices of cheese (provolone, Swiss, cheddar, or mozzarella)
- 1 tablespoon mayonnaise (optional)
- 1/2 tablespoon butter (for grilling)
- Salt and pepper to taste
- Optional: tomato slices, red onion, baby spinach, or a dash of hot sauce
Instructions
- Prep your ingredients: shred or slice cooked chicken, mash avocado with a pinch of salt and pepper (or slice it).
- Spread mayo on one side of each bread slice, if using.
- Layer one slice with cheese, chicken, avocado, and any optional toppings.
- Top with the second slice of cheese and the other bread slice.
- Heat a skillet over medium heat, butter the outsides of the sandwich and place it in the pan.
- Cook 3–4 minutes per side, pressing gently with a spatula, until golden brown and cheese is melted.
- Slice in half and enjoy while warm and melty.
Notes
Customize with different cheeses, greens, or spices. Best enjoyed fresh. Reheat in skillet or toaster oven for best texture. Avoid freezing due to avocado.
