  • 2 chicken breasts, diced
  • 1/2 lb shrimp, peeled and deveined
  • 1 cup long-grain rice
  • 1 can diced tomatoes
  • 1/2 cup bell peppers, chopped
  • 1/2 cup onion, diced
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 tsp Cajun seasoning
  • 1/2 tsp thyme
  • 2 cups chicken broth
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Sauté chicken until golden brown, then remove and set aside.
  3. In the same skillet, cook onions, bell peppers, and garlic until softened.
  4. Add diced tomatoes, chicken broth, rice, and seasonings. Stir well.
  5. Return chicken to the skillet, cover, and let simmer for 20 minutes.
  6. Add shrimp in the last 5 minutes of cooking, stirring occasionally.
  7. Once the shrimp turn pink and the rice is tender, remove from heat.
  8. Garnish with fresh parsley and serve warm.

Notes

For extra heat, add a pinch of cayenne pepper. Serve with crusty bread or a fresh green salad.
