- 2 chicken breasts, diced
- 1/2 lb shrimp, peeled and deveined
- 1 cup long-grain rice
- 1 can diced tomatoes
- 1/2 cup bell peppers, chopped
- 1/2 cup onion, diced
- 2 cloves garlic, minced
- 1 tsp smoked paprika
- 1 tsp Cajun seasoning
- 1/2 tsp thyme
- 2 cups chicken broth
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Sauté chicken until golden brown, then remove and set aside.
- In the same skillet, cook onions, bell peppers, and garlic until softened.
- Add diced tomatoes, chicken broth, rice, and seasonings. Stir well.
- Return chicken to the skillet, cover, and let simmer for 20 minutes.
- Add shrimp in the last 5 minutes of cooking, stirring occasionally.
- Once the shrimp turn pink and the rice is tender, remove from heat.
- Garnish with fresh parsley and serve warm.
Notes
For extra heat, add a pinch of cayenne pepper. Serve with crusty bread or a fresh green salad.
