  • 1 lb ground beef (80/20 for flavor)
  • 1/2 cup diced onion
  • 1 cup shredded cheddar cheese (or your favorite melty cheese)
  • 1/4 cup chopped dill pickles
  • 2 tbsp ketchup
  • 1 tbsp yellow mustard
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 12 eggroll wrappers
  • Water (for sealing wrappers)
  • Oil for frying (vegetable or canola)
  • Optional for dipping: Thousand Island dressing, ketchup, ranch, or burger sauce

Instructions

  1. In a skillet over medium heat, cook the ground beef and diced onion until the beef is browned and onion is soft, about 6–8 minutes. Drain excess grease.
  2. Stir in ketchup, mustard, garlic powder, salt, and pepper. Mix well and cook for another minute. Remove from heat and let cool slightly.
  3. Once slightly cooled, stir in shredded cheese and chopped pickles.
  4. Lay an eggroll wrapper flat in a diamond shape. Place 2–3 tablespoons of filling in the center. Fold the bottom corner over the filling, then fold in the sides and roll tightly. Seal the edge with water.
  5. To fry: Heat 2 inches of oil in a skillet to 350°F (175°C). Fry 3–4 eggrolls at a time for 3–4 minutes until golden brown.
  6. To air-fry: Spray eggrolls with oil and air fry at 380°F (193°C) for 10–12 minutes, flipping halfway.
  7. To bake: Brush with oil and bake at 400°F (200°C) for 15–18 minutes, flipping once.
  8. Serve warm with your favorite dipping sauce.

Notes

Let the beef mixture cool before adding cheese. Seal tightly to prevent leaks. Cook in batches for best results. Try variations like adding bacon, hot sauce, or using vegan substitutes.
