Instructions
- Dice the Roma tomatoes and place them in a medium bowl.
- Stir in the minced garlic, chopped red onion (if using), and fresh basil.
- Drizzle with olive oil and balsamic vinegar. Add a pinch of salt and pepper. Mix gently.
- Spread the cream cheese evenly in a shallow serving bowl or plate.
- Spoon the tomato mixture evenly over the cream cheese layer.
- Garnish with extra basil if desired and serve with toasted baguette slices or crackers.
Notes
Let the tomato mixture rest for 10–15 minutes for best flavor. Drain excess tomato juice to prevent sogginess. Try goat cheese for a tangy twist or add mozzarella pearls for a Caprese vibe.
