Ingredients

  • 1 (10 oz) can of Rotel (diced tomatoes with green chilies), drained
  • 1 cup shredded cheddar cheese
  • 1 packet of taco seasoning (about 1 oz)
  • 1 cup crumbled cooked bacon (optional)
  • 23 green onions, chopped (for garnish)

Instructions

  1. Drain the Rotel to remove excess liquid.
  2. In a medium bowl, mix sour cream and taco seasoning until smooth.
  3. Stir in the drained Rotel, shredded cheddar cheese, and bacon (if using).
  4. Cover and chill for at least 30 minutes for best flavor.
  5. Top with chopped green onions before serving with chips or dippers of choice.

Notes

For extra kick, add jalapeños or pepper jack cheese. Swap sour cream for Greek yogurt for a lighter version.
