- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 1/2 cup shelled pistachios, finely chopped
- 1 (8 oz) package cream cheese, softened
- 1/3 cup granulated sugar
- 1 tsp vanilla extract
- 1 large egg
- 1/2 cup blackberry jam or preserves (seedless, if preferred)
- 1/2 cup fresh blackberries (optional)
- Extra chopped pistachios for garnish (optional)
- Powdered sugar for dusting (optional)
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch pan with parchment paper.
- In a bowl, combine flour, sugar, melted butter, and chopped pistachios. Mix until crumbly.
- Press the crust mixture into the prepared pan. Bake for 12–15 minutes until lightly golden. Let cool slightly.
- In another bowl, beat cream cheese, sugar, and vanilla until smooth. Add egg and mix until creamy.
- Spread the blackberry jam over the crust. Pour cream cheese mixture on top. Dot with blackberries.
- Bake for 25–28 minutes until set and edges are golden.
- Cool to room temperature, then chill in fridge for at least 2 hours.
- Before serving, garnish with chopped pistachios and powdered sugar. Slice and enjoy!
Notes
These bars are freezer-friendly and perfect for make-ahead desserts. Try with other berry jams or a citrus twist by adding zest to the filling.
