- 2 cups fresh blackberries (plus a few extra for garnish)
- 1/2 cup granulated sugar
- 1 teaspoon lemon juice
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 1 tablespoon powdered sugar (optional, for extra sweetness)
- Fresh mint leaves (optional, for garnish)
Instructions
- In a saucepan over medium heat, combine the blackberries, granulated sugar, and lemon juice. Cook for about 5–7 minutes, stirring occasionally, until the berries break down and the mixture thickens slightly.
- Remove from heat and let it cool for a few minutes. Then blend until smooth using a blender or food processor. Strain through a fine mesh sieve to remove seeds. Set aside to cool completely.
- In a large bowl, whip the heavy cream and powdered sugar (if using) until soft peaks form. Add vanilla extract and gently mix.
- Once the blackberry mixture is cool, gently fold it into the whipped cream until fully combined and smooth. Be careful not to deflate the cream too much.
- Spoon the mousse into serving glasses or jars. Refrigerate for at least 2 hours to set. Top with fresh blackberries and mint leaves before serving.
Notes
For a vegan version, use coconut cream and plant-based sweetener. Frozen berries also work—just thaw before use. Add orange zest for a citrus twist or drizzle with melted chocolate for extra indulgence.
