- 6 cups Rice Krispies cereal
- 1 (10 oz) bag mini marshmallows (about 5 ½ cups)
- ½ cup Biscoff cookie butter (plus extra for drizzling, optional)
- 3 tablespoons unsalted butter
- Pinch of salt
- Optional toppings: crushed Biscoff cookies, white chocolate drizzle
Instructions
- Lightly grease an 8×8 or 9×9-inch baking dish with butter or line with parchment paper.
- In a large saucepan over low heat, melt the butter. Add mini marshmallows and stir until fully melted.
- Stir in the cookie butter and pinch of salt until combined.
- Remove from heat and quickly mix in the Rice Krispies cereal until evenly coated.
- Using a lightly greased spatula, press the mixture evenly into the prepared baking dish—don’t pack too tightly.
- Optional: Drizzle extra melted Biscoff or sprinkle crushed Biscoff cookies over the top while warm.
- Let cool for 30–45 minutes at room temperature. Cut into squares and enjoy.
Notes
Try drizzling melted white chocolate or adding a pinch of sea salt on top for extra indulgence. To make dairy-free, use plant-based butter and vegan marshmallows.
