- 6 cups Rice Krispies cereal
- 1 (10 oz) bag mini marshmallows
- 3 tablespoons unsalted butter
- 1 (3.4 oz) box instant banana pudding mix (just the dry mix)
- 1/2 cup crushed vanilla wafer cookies (plus extra for topping)
- 1/4 cup white chocolate chips (optional)
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Lightly grease a 9×9-inch baking dish or line with parchment paper.
- In a large pot over low heat, melt the butter. Add mini marshmallows and stir until melted and smooth.
- Remove from heat and stir in dry banana pudding mix, vanilla extract, and salt until combined.
- Fold in Rice Krispies cereal and crushed vanilla wafers. If using, mix in white chocolate chips.
- Press mixture evenly into prepared pan using greased spatula or wax paper.
- Sprinkle extra crushed vanilla wafers on top and press in gently.
- Let cool at room temperature for at least 30 minutes before slicing.
Notes
Store at room temperature up to 3 days or refrigerate for up to 5 days. For longer storage, freeze individually wrapped bars for up to 1 month.
