- 4 boneless, skinless chicken breasts
- Salt, pepper, and garlic powder to taste
- 2 tablespoons olive oil
- ½ cup Dijon mustard
- ⅓ cup honey
- 2 tablespoons mayonnaise
- 8 oz sliced white or cremini mushrooms
- 1 tablespoon butter
- 8 slices thick-cut bacon, cooked until crispy
- 1 cup shredded Monterey Jack cheese
- 1 cup shredded cheddar cheese
Instructions
- Pound chicken breasts to even thickness and season with salt, pepper, and garlic powder.
- Heat olive oil in a skillet over medium heat. Sear chicken for 3–4 minutes per side until golden brown. Set aside.
- Mix Dijon mustard, honey, and mayonnaise in a bowl to create the honey mustard sauce.
- Sauté sliced mushrooms in butter until browned and tender. Remove from heat.
- Place chicken in a baking dish. Spread honey mustard on each breast.
- Top with mushrooms, bacon strips or crumbles, and a mix of both cheeses.
- Cover with foil and bake at 375°F (190°C) for 15 minutes.
- Remove foil and bake for an additional 10 minutes, or until cheese is melted and bubbly.
- Let rest for 3 minutes before serving.
Notes
For extra flavor and moisture, marinate the chicken in honey mustard for 30 minutes before searing. Broil for the last 2 minutes for a golden, bubbly cheese finish.
